Grated Chocolate
Grated chocolate can be folded into a batter, much like chocolate chips, or used to decorate desserts or drinks.
Chill a bar or block of couverture. Line a jellyroll pan with waxed paper.
Draw the chocolate over the holes of a stainless-steel hand-held grater onto the waxed paper.
Store the grated chocolate in an airtight container in a cool place.
