Appliqués
Similar to filigree or stained glass, with this decoration you pipe an outline of an object (for example, a butterfly) and then color in the center.
Place a picture of the object you want to copy on a cookie sheet or jellyroll pan under a sheet of waxed paper or acetate.
Place melted chocolate or icing in a pastry bag fitted with a writing tip. Outline the object.
Allow the outline to set in a cool room, or refrigerate for 3 to 5 minutes.
Place melted chocolate or icing of another color in a pastry bag fitted with a writing tip. Lightly fill in the area within the outlines with chocolate.
Quickly lift and tap the cookie sheet after you fill each small object or each area of a larger object; the newly piped material should spread and flatten, filling in any small gaps.
Refrigerate for 3 to 5 minutes, or until set.
Carefully remove the appliqués from the waxed paper or acetate with a metal spatula.
Handle and store these decorations as you would filigree.
