éclair Birthday Cake
There's a creamy richness to this cake that recalls an indulgent custard-filled éclair. Serve with hot coffee for a lovely treat.
INGREDIENTS | SERVES 15
- 1 18.25-ounce box fudge chocolate cake mix, plus ingredients called for on box
- 4 cups ricotta cheese
- 1 cup sugar
- 4 eggs
- 1 teaspoon vanilla
- 1 3.9-ounce box instant chocolate pudding mix
- 1 cup milk
- 1 8-ounce tub nondairy whipped topping
Preheat oven to 350°F. Grease and flour 9″ × 13″ cake pan. Set aside.
Prepare cake batter according to instructions on the package and pour into pan.
In a mixing bowl, combine cheese, sugar, eggs, and vanilla. Blend completely and layer over cake batter. Bake according to cake mix instructions.
Remove cake from oven and allow to cool completely.
While cake cools, mix pudding, milk, and whipped topping. Spread over cake. Refrigerate until ready to serve.
