Belgian Waffles
Slice some fresh, ripe peaches or nectarines and serve them on the side. Or try your favorite jam or marmalade as a topping.
INGREDIENTS | YIELDS 8–10 WAFFLES
- 1½ cups cake flour
- 2½ teaspoons baking powder
- 1 tablespoon granulated sugar
- ½ teaspoon kosher salt
- 3 eggs, separated
- ¼ cup (½ stick) unsalted butter, melted
- 1 cup milk
- ½ cup sour cream
Preheat waffle iron according to manufacturer's instructions. Triple-sift flour, baking powder, sugar, and salt into a large bowl. Set aside.
In a separate bowl combine the egg yolks, melted butter, milk, and sour cream. Whisk together thoroughly.
In another bowl, whip the egg whites until they are stiff, and set aside.
Pour the egg yolk mixture into the flour and stir together briefly. Lumps are okay. Add the stiffened egg whites to this mixture and fold together gently until they are just combined.
Cook batter in a waffle iron. Serve immediately with butter and syrup.
