Whole Grain Wraps

These wraps are delicious and nutritious!

INGREDIENTS | YIELDS 5 WRAPS

  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • ¼ cup rolled oats (not quick cooking)
  • 2 tablespoons brown rice flour
  • 2 tablespoons cornmeal
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1 tablespoon lard
  • ½–¾ cup cold water
  1. In a large bowl, combine all-purpose flour, whole wheat flour, oats, rice flour, cornmeal, salt, and baking powder. Cut in lard to a crumb consistency. Add enough water to hold dough together.

  2. Knead until smooth, about 2–3 minutes, then rest 5 minutes.

  3. Turn dough out onto a floured work surface, divide and roll into 5 balls. With floured fingers, flatten into a thin disk. Using a rolling pin, roll into a thin sheet, no more than ¼″ thick. If the dough becomes elastic and springs out of shape, rest for 5 minutes, then roll again.

  4. Preheat a dry griddle over medium heat. Cook until lightly golden about 1–2 minutes per side.
