Flour Tortillas

Flour tortillas are everyone's favorite, especially when they're homemade.

INGREDIENTS | YIELDS 5 LARGE TORTILLAS

  • 2 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1 tablespoon lard
  • 1¾ cups cold water
  1. In a large bowl, combine flour, salt, and baking powder. Cut in lard to a crumb consistency, then add enough water to hold dough together. Knead until smooth, about 2–3 minutes, then rest 5 minutes.

  2. Turn dough onto a floured work surface. Divide dough into 5 equal portions, and roll into balls. With floured fingers, flatten each ball into a thin disk.

  3. Using a rolling pin, roll the disk into a thin sheet, ¼″ thick. If the dough becomes elastic and springs out of shape, allow it to rest for 5 minutes, then roll again.

  4. Preheat a cast-iron griddle over medium heat. Place tortillas onto the hot, dry griddle, and cook until lightly golden but still pliable, about 1–2 minutes per side. Serve warm.
