Popovers
Jazz up this batter with a handful of cheese, a tablespoon of cinnamon sugar, or a few fresh blueberries. Or boost the nutritional value by using whole wheat flour instead.
INGREDIENTS | YIELDS ABOUT 12 POPOVERS
- 4 eggs, room temperature
- 2 cups milk, room temperature
- 1 teaspoon kosher salt
- 2 cups all-purpose flour

Preheat oven to 400°F. Place the popover pan into the oven to preheat as well.

Combine eggs, milk, salt, and flour in a blender, and blend until well combined.

Pour the batter into the heated pan, filling each cup to the rim. Bake at 400°F for 15 minutes, then turn the heat down to 375°F and bake for 20 minutes longer, until golden brown. Serve immediately.
Pop Secrets
Temperature is the key to well-poufed popovers. If the ingredients or the oven are too cold, there will not be enough energy to push the batter up into a beautiful crown. Be sure the ingredients have lost the chill from the fridge, preheat the pan, and don't open the oven door during the first 30 minutes of baking. If you do, the temperature will drop dramatically, and the popovers will fall.
