Tri-Color Braid
Joining three contrasting dough colors makes a great-looking loaf. The combination of flavors in this recipe makes a great-tasting loaf too.
INGREDIENTS | YIELDS 3 LOAVES
- 1 recipe Braided Dark Rye
- 1 recipe Molasses Whole Wheat Braid
- 1 recipe Basic White Bread
- 1 egg
- 1 tablespoon water
- 1 pinch salt
Make all three doughs according to their individual recipes. Cover each with plastic, and rise at room temperature until doubled in volume, about 1½ hours.
Line a baking sheet with parchment. Turn each risen dough out onto a floured surface and divide each into 3 equal portions. Shape each into a tight rope, no longer than 12″.
Lay three ropes pointing toward you, one of each color, and form a 3-strand braid.
Place onto prepared pan, cover loosely with plastic wrap, and proof for 30 minutes. Repeat with remaining dough. Preheat oven to 375°F.
Whisk egg with a tablespoon of water and a pinch of salt, and brush gently onto the top of the risen loaf.
Bake until golden brown and hollow sounding, about 30–40 minutes. Cool completely on a rack before serving.
