Udon Noodle Slaw

Make this dish ahead and chill it for an easy and refreshing supper or light lunch. This is one cooked pasta that you’ll want to drain and rinse off in cold water. Otherwise, you’ll find starch clings to the strands.

INGREDIENTS | SERVES 4

  • 1 (1 pound) package fresh udon noodles
  • 6 ounces broccoli slaw
  • 3 tablespoons pickled ginger
  • 1/3 cup soy sauce
  • 2 tablespoon brown rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon mayonnaise
  • 1 tablespoon sugar
  • Sprinkles of rice seasoning for garnish
  1. Bring a large pot of water to a boil and cook the noodles for about 1 minute. Drain and rinse in cold water. Set aside to cool slightly.

  2. Add the broccoli slaw and the ginger to a salad bowl. Mix together the soy sauce, vinegar, sesame oil, mayonnaise, and sugar, stirring to combine well.

  3. Add the noodles to the bowl and toss the mixture together until well combined. Add the dressing and toss again.

  4. Sprinkle with rice seasoning and serve.
