Mango-Ginger Ice
Select ripe mangoes, preferably the flat yellow varieties available seasonally. These have a subtle sweet flavor that works well with fresh ginger.
INGREDIENTS | SERVES 4
- Juice of 3 limes
- 1 tablespoon freshly grated fresh ginger
- 3 ripe mangoes, peeled and sliced
- 1 teaspoon fresh lime zest
- 1 cup sugar syrup (see below)
Combine the ingredients in the container of a blender and process until smooth.
Chill the mixture and churn according to manufacturer’s directions.
Scoop the mixture into a container and freeze.

How Do I Make a Simple Sugar Syrup?
To make sugar syrup: Combine 3 cups water and 2 cups granulated sugar in a saucepan and cook over medium-low heat until the sugar dissolves entirely and the mixture turns slightly syrupy. Set aside to cool. Save leftovers for another use.
