Chocolate Tofu Pudding
This very easy-to-make pudding tastes like an extravagantly decadent mousse with loads of cream, but its rich texture— and extra protein—come from tofu. If you want to reduce calories, omit the chocolate chips, making this dessert an even healthier choice. Be sure to use the “cook-and-serve” puddings, not the instant ones.
INGREDIENTS | SERVES 4
- 2 cups nonfat milk or soymilk
- 1½ cups silken firm tofu
- 2 (1.3-ounce) boxes sugar-free and fat-free chocolate pudding mixture
- 1 cup chocolate chips
Combine the milk, tofu, and pudding mixture in a blender and process until smooth.
Pour the mixture into a saucepan. Heat slowly over medium-low heat, stirring constantly, until the mixture thickens.
Remove from the heat, stir in the chocolate bits, and pour into a heatproof bowl. Chill until ready to serve.
