"Sausage" Bread Pudding

Vary the berry topping to suit your taste by using raspberries, blueberries, blackberries, or strawberries. If these are not available, substitute 2 cups of your favorite seasonal fruits cut into small cubes. This dish is ideal for a leisurely family brunch.

INGREDIENTS | SERVES 4

  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1 cup soy “sausage” meat
  • 1 teaspoon Cajun or Creole seasoning or hot sauce to taste
  • 2 cups whole milk
  • 3 tablespoons melted butter
  • 4 large eggs
  • 2 cups shredded Cheddar or Monterey Jack cheese
  • 3 cups cubed sourdough bread
  • 2 cups fresh blackberries or blueberries
  1. Preheat the oven to 375°F. Lightly butter a 2-quart baking dish.

  2. Heat the oil in a large skillet over medium heat and sauté the garlic for about 30 seconds. Add and crumble the “sausage” meat, stirring as you crumble, and season with the Cajun seasoning. Reduce the heat to low.

  3. Meanwhile, beat together the milk, butter, and eggs until foamy. Stir in the cheese and sausage mixture.

  4. Put the bread into the baking dish and pour the milk mixture over the bread.

  5. Bake the custard for about 45 minutes or until puffy and golden.

  6. Serve hot with the fruit topping.
