Soy in all its many guises has gotten big press. Touted as an amazing food, a terrific protein source, and a cholesterol-free ingredient, soy wins recognition as a staple of the vegetarian diet. Its culinary benefits deserve merit, too, for when turned into bland tofu, fermented tempeh, soymilk and soy dairy-free alternatives, flour, and the various meat analogs, soy works well in many different recipes.
