Warm Rice Salad
Let the rice cool to room temperature, or just slightly warmer, before assembling this salad; this is not meant to be a hot dish.
INGREDIENTS | SERVES 4
- 3 cups cooked rice
- 1 cup cashews
- 1 cup canned lychees, drained
- ½ cup wasabi-flavored peas
- ½ cup candied ginger cubes
- 3 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 teaspoon toasted sesame oil
- Rice seasoning to taste
Combine the rice, cashews, lychees, peas, and ginger in a large salad bowl.
In a small bowl, combine the soy sauce, vegetable oil, and sesame oil and mix well.
Dress the salad with this mixture, tossing well.
Sprinkle with the rice seasoning and serve.

What Is Rice Seasoning?
A Japanese dry condiment used for perking up rice and other dishes, rice seasoning is available at Asian markets and well-stocked supermarkets. Check the label before you buy; some brands contains dried shrimp or shaved bonito flakes. The basic ingredients are crumbled seaweed, sesame seeds, salt, and sugar. You just shake out what you want from the small jar.
