Veggie Quesadillas

Most supermarkets now stock flour tortillas in several flavors, and this gives you a chance to use healthier whole wheat or multigrain options. You might even try out a flavored tortilla for a change of pace.

INGREDIENTS | SERVES 6

  • 6 (8-inch) whole wheat or multigrain tortillas
  • 2½ cups shredded Cheddar cheese
  • 2 cups mixed shredded or cutup vegetables
  • ½ cup salsa
  1. Preheat a large skillet or griddle over medium heat and spray it lightly with nonstick cooking spray.

  2. Place 1 tortilla on a flat surface and sprinkle it with ½ cup cheese. Put about 1/3 cup vegetables and 2 tablespoons salsa on half of the tortilla and fold it over to close.

  3. Place the tortilla onto the griddle and heat until the first side turns golden and the cheese melts. Flip over to cook the second side. Repeat with the remaining ingredients, spraying with nonstick cooking spray as needed and not letting the griddle overheat.

  4. Cut the quesadillas into serving portions and serve hot.

Which Veggies?

These quesadillas are great vehicles for getting kids to eat their vegetables. Of course, offer their favorites, but why not slip in others, like radishes and sprouts? Head to your nearest salad bar and pick out a combination of vegetables, even pitted black olives and a three-bean salad, as fillings. Just make sure that the ones you select are shredded or sliced thinly enough to wrap up in the tortilla.
