Fruited Blondies
Typically, brownies are just chocolate with nuts sometimes mixed into the batter. But this takes the fudgie brownie to a different level with white chocolate and bits of dried fruit.

- ½ cup (1 stick) unsalted butter
- 8 ounces white chocolate
- ¾ cup firmly packed light brown sugar
- 1 egg, lightly beaten
- 1 teaspoon vanilla extract
- 1 cup white whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/3 cup dried blueberries, or more as desired
- 1/3 cup dried cranberries or dried cherries, or more as desired
Melt the butter and chocolate together in a double boiler over just-simmering water. When melted, remove from the heat and set aside to cool.
Preheat the oven to 350°F. Lightly butter an 8-inch or 9-inch cake pan.
Beat together the sugar and egg until light and fluffy. Beat in the vanilla.
Combine the flour, baking powder, and salt in a separate bowl and beat with the sugar mixture until just incorporated.
Stir in the butter-chocolate mixture gently and the 2 different berries until just incorporated. Spoon the batter into the prepared pan.
Bake the blondies for about 25 minutes or until the center feels firm and a toothpick inserted in the center comes out clean. Cool on a rack before slicing.
