Oven-Fried Chicken Nuggets

- 8 tablespoons butter, melted
- 2 tablespoons Dijon mustard
- 3 cups dry breadcrumbs
- 1 cup Parmesan cheese
- 1 tablespoon onion powder
- 2 teaspoons paprika
- 2 teaspoons salt
- 1 teaspoon pepper
- 3 boneless, skinless chicken breast, cut in chunks
Preheat oven to 350ºF. Line a baking sheet with foil and set aside.
Melt butter and mix it with the mustard. Set aside.
Combine bread crumbs, Parmesan cheese, onion powder, paprika, salt, and pepper in a bowl. Set aside.
Toss chicken chunks in the butter mixture; then roll them around in the crumb mixture.
Arrange the coated chicken chunks on the foil and bake for 1 hour. Serve warm or at room temperature.
