"Baby" Red Potatoes
- 6 pounds small red potatoes
- 8 tablespoons butter
- 4 tablespoons Dijon mustard
- ½ cup sliced whole green onions
- Salt and pepper to taste
Shave an inch-wide belt around the middle of each potato with a vegetable peeler.
Place potatoes in a large pot in enough cold water to cover. Boil potatoes for 15 minutes or until they can be pierced easily with the tip of a paring knife.
Drain potatoes and toss them with butter, mustard, and green onions. Season with salt and pepper.
