Polenta
Polenta is a dish made from boiled whole-grain yellow or white cornmeal. Polenta is very diverse, since it can be boiled, fried, baked, grilled, microwaved, and served morning, noon, or night.
INGREDIENTS | SERVES 6
- 1 cup skim milk
- 2 cups favorite low-sodium stock
- ½ cup cornmeal
- ¼ cup grated cheese (optional)
- Freshly cracked black pepper, to taste
Bring the milk and stock to a boil over medium heat in a saucepan.
Slowly whisk in the cornmeal a bit at a time; stir frequently until cooked, approximately 15 minutes until mixture is the consistency of mashed potatoes.
Remove from heat, add the cheese, and season with pepper.
