Kasha Buckwheat Groats
Kasha refers to toasted buckwheat kernels that can be purchased whole, cracked, or ground. This whole grain is high in fiber, protein, B vitamins, and potassium. It imparts a nutty taste and unique texture to salads, soups, and stews.
INGREDIENTS | SERVES 4
- 1 tablespoon olive oil
- 1 cup whole kasha
- 2 cups chicken broth
- ½ teaspoon salt
Heat the olive oil in a skillet over medium-high heat and sauté the kasha in it for 3 minutes.
Add the chicken broth and salt and bring to a boil. Cover, turn heat to low, and simmer for 15 minutes.
Take the pan off the heat and let it sit with the cover on for 10 minutes. Serve warm.
