Kasha Buckwheat Groats

Kasha refers to toasted buckwheat kernels that can be purchased whole, cracked, or ground. This whole grain is high in fiber, protein, B vitamins, and potassium. It imparts a nutty taste and unique texture to salads, soups, and stews.

INGREDIENTS | SERVES 4

  • 1 tablespoon olive oil
  • 1 cup whole kasha
  • 2 cups chicken broth
  • ½ teaspoon salt
  1. Heat the olive oil in a skillet over medium-high heat and sauté the kasha in it for 3 minutes.

  2. Add the chicken broth and salt and bring to a boil. Cover, turn heat to low, and simmer for 15 minutes.

  3. Take the pan off the heat and let it sit with the cover on for 10 minutes. Serve warm.
