Yogurt Cheese

This requires overnight refrigeration, and the fresh flavor of the yogurt produces an equally light cheese, which has many uses.

INGREDIENTS | SERVES 6

  • 32 ounces nonfat plain yogurt
  • ½ bulb garlic, minced
  • Freshly cracked black pepper, to taste
  • ½ bunch parsley, chopped
  1. Mix together all the ingredients.

  2. Place the mixture in a colander lined with cheesecloth, then place the colander in a large bowl to catch the whey. Refrigerate overnight.

  3. When you are ready to serve, remove the colander from the refrigerator and dispose of the whey and cheesecloth. Slice and serve.
