Turkey Meatballs with Fruit Sauce

This is a tasty change of pace. The fruit complements the turkey beautifully. Use ground turkey breast, which contains white meat only.

INGREDIENTS | SERVES 6

  • Olive oil
  • 2 slices toasted 100% whole-wheat bread
  • 1 pound ground turkey breast
  • ¼ cup dried cranberries
  • ¼ cup chopped pecans
  • 1 egg
  • ¼ teaspoon cinnamon
  • ¼ teaspoon curry powder
  • Pinch of kosher salt
  • Freshly cracked black pepper, to taste
  • ½ cup Apple Chutney
  1. Preheat oven to 350°F. Brush a baking dish with oil.

  2. Soak the bread in water until completely saturated and then squeeze out the excess liquid.

  3. Mix together the soaked bread and all the remaining ingredients in a bowl.

  4. Shape the mixture into small balls. Place the balls in the prepared baking dish.

  5. Cover with foil and bake for about 20 minutes. Serve with Apple Chutney.
