Shredded Beef and Slaw Sandwiches
These hearty sandwiches are perfect for viewing the Super Bowl game. Serve with lots of potato chips and beer.
INGREDIENTS | SERVES 6
- 3 cups chopped red cabbage
- 1 cup shredded carrot
- ⅔ cup mayonnaise
- 1 teaspoon dried dill weed
- 1 (17-ounce) package prepared roast beef
- ¼ cup mustard-mayonnaise blend
- 6 hoagie buns, split and toasted
In large bowl, combine cabbage, carrots, mayonnaise, and dill weed; mix well.
Prepare roast beef as directed on package; shred beef and mix with gravy.
Spread mustard blend on hoagie buns.
Top with beef mixture and then coleslaw mixture; top with top half of buns and press down. Serve immediately.
Coleslaw
There are many coleslaw recipes out there; use your favorite in this easy recipe. Or you could use a deli coleslaw to make these sandwiches even easier. If the coleslaw is quite liquid, drain it before adding to the sandwiches.
