All-American Fajitas
These fajitas are easy because you start with fully cooked beef that is simply reheated. Serve in flour or corn tortillas; your choice!
INGREDIENTS | SERVES 6
- 1 (17-ounce) package refrigerated cooked beef roast
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 (4-ounce) can diced green chilies, drained
- 1 cup chunky salsa, drained
- 1 avocado, chopped
- 1 tablespoon lemon juice
- 1 cup sour cream
- ¼ cup chopped cilantro
- 6 (10″) flour tortillas, warmed
- 1½ cups shredded Cheddar cheese
Prepare beef as directed on package. Shred beef and set aside.
In large saucepan, heat olive oil. Add onion and garlic; cook and stir for 5 minutes.
Add bell peppers; cook and stir for 4 minutes. Add green chilies, salsa, and beef; heat through.
In a small bowl, combine avocado, lemon juice, sour cream, and cilantro; set aside.
Divide beef mixture among flour tortillas. Top with cheese, then sour cream mixture; roll up and serve immediately.
Fajitas
