Rocky Road Pizza

This sweet pizza will be a big hit with the kids — of all ages! You can use many different toppings: try chopped candy bars, chopped caramels, marshmallow topping, or caramel ice cream topping.

INGREDIENTS | SERVES 8

  • 1 (18-ounce) package peanut butter cookie dough
  • 1 (12-ounce) package semisweet chocolate chips, divided
  • 1 cup milk chocolate chips
  • 2 cups miniature marshmallows
  • ½ cup caramel fudge ice cream topping
  • ¼ cup peanut butter
  • 1 cup salted peanuts
  1. Preheat oven to 350°F. Press cookie dough evenly onto a greased 12″ pizza pan; flute edges.

  2. Bake for 15 minutes or until dough is just set.

  3. Remove from oven. Sprinkle with ½ of the semisweet chocolate chips, the milk chocolate chips, and marshmallows. Drizzle with the ice cream topping.

  4. Return to oven and bake 8 to 12 minutes longer until marshmallows are light golden brown. Cool 10 minutes.

  5. In small pan, melt remaining 1 cup semisweet chocolate chips with the peanut butter until smooth. Drizzle over pizza; top with salted peanuts. Let cool 30 minutes, then serve.

Pizza Variations

It's easy to vary this pizza recipe. Use a sugar cookie dough, spread with strawberry-flavored cream cheese dip, and top with fresh fruits; drizzle with marshmallow crème. Or use brownie dough; top with marshmallow crème, chocolate chips, and peanut butter bits.
