Lemon Dream Bars
These dreamy bars have a cookie crust and smooth and sweet tart filling. They taste like lemon meringue pie, but they're so much easier to bake!
INGREDIENTS | SERVES 12
- 1 (18-ounce) package refrigerated sugar cookie dough
- ½ cup chopped pecans
- 2 eggs, beaten
- ½ cup sugar
- ¼ cup lemon juice
- 1 cup coconut
- ¼ teaspoon salt
- ¼ teaspoon baking soda
- 1 teaspoon vanilla
- 1 cup powdered sugar
- 3 tablespoons lemon juice
Preheat oven to 350°F. Press cookie dough in bottom of 13″ × 9″ baking pan.
Sprinkle with pecans; press pecans into dough. Bake for 12 to 15 minutes until dough is puffy.
Meanwhile, combine eggs, sugar, and lemon juice in medium bowl; beat well. Add coconut, salt, baking soda, and vanilla and beat.
Remove crust from oven and pour lemon mixture over. Bake 19 to 24 minutes until filling is set and golden brown around edges. Remove to wire rack.
Combine powdered sugar and lemon juice in small bowl; drizzle over warm bars. Cool completely and then cut into squares.
These bars should be eaten within a day or two of preparation. The smooth and creamy lemon filling will gradually make the crust a little bit damp. They don't freeze well, so plan on making them for a crowd so they get eaten quickly.
