Cranberry Chicken Salad
This beautiful salad is easy to make. You can serve it on baby spinach leaves, or serve as a sandwich on toasted wheat bread.
INGREDIENTS | SERVES 6
- 3 cups cubed, cooked chicken breasts
- ½ cup dried cranberries
- ½ cup chopped green onion
- 3 cups prepared fruit salad
- 1 cup cashew pieces
- 1 cup plain yogurt
- ½ cup mayonnaise
- 3 tablespoons mustard
- 3 tablespoons cranberry juice cocktail
- 1 teaspoon dried thyme leaves
- Pinch dried mint leaves
In large bowl, combine chicken, cranberries, green onion, fruit salad, and cashews; toss.
In small bowl, combine remaining ingredients and stir well to mix. Pour over chicken mixture and stir gently.
Serve immediately or cover and chill up 3 to 4 hours before serving.
Changing Salads
Most main-dish salads can be varied to include any meat, any vegetable, or any fruit. Just think of foods you think would go well together and combine them in a salad with a homemade dressing or your favorite bottled dressing. Use your imagination and have fun.
