Cranberry Chicken Salad

This beautiful salad is easy to make. You can serve it on baby spinach leaves, or serve as a sandwich on toasted wheat bread.

INGREDIENTS | SERVES 6

  • 3 cups cubed, cooked chicken breasts
  • ½ cup dried cranberries
  • ½ cup chopped green onion
  • 3 cups prepared fruit salad
  • 1 cup cashew pieces
  • 1 cup plain yogurt
  • ½ cup mayonnaise
  • 3 tablespoons mustard
  • 3 tablespoons cranberry juice cocktail
  • 1 teaspoon dried thyme leaves
  • Pinch dried mint leaves
  1. In large bowl, combine chicken, cranberries, green onion, fruit salad, and cashews; toss.

  2. In small bowl, combine remaining ingredients and stir well to mix. Pour over chicken mixture and stir gently.

  3. Serve immediately or cover and chill up 3 to 4 hours before serving.

Changing Salads

Most main-dish salads can be varied to include any meat, any vegetable, or any fruit. Just think of foods you think would go well together and combine them in a salad with a homemade dressing or your favorite bottled dressing. Use your imagination and have fun.
