Easy Mashed Potatoes

Sour cream, buttermilk, and Parmesan cheese add great flavor and texture to these super easy potatoes.

INGREDIENTS | SERVES 6

  • 1 (24-ounce) bag steam and mash potatoes
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • ½ cup sour cream
  • ½ cup buttermilk
  • 1 teaspoon salt
  • ⅛ teaspoon white pepper
  • ⅓ cup grated Parmesan cheese
  1. Prepare potatoes as directed on package. Meanwhile, cook garlic in butter in small pan until tender, about 3 to 4 minutes.

  2. When potatoes are done, place in warmed bowl and add garlic and butter; mash.

  3. Add all remaining ingredients and mash and beat until combined. Serve immediately.

Leftover Mashed Potatoes

If you have leftover mashed potatoes, refrigerate them promptly. Then make into potato cakes by adding 1 egg and 2 tablespoons flour to each cup of potatoes. Form into patties, coat in dry bread crumbs, and fry in olive oil until crisp and brown, turning once.
