Asparagus Chicken Calzones
Calzones are stuffed pizzas. They're easy to make when you start with frozen bread dough and precooked chicken.
INGREDIENTS | SERVES 6
- 1 loaf frozen bread dough, thawed
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 cup chopped asparagus spears
- 1 (9-ounce) package cooked cubed chicken breast
- 1 cup mascarpone cheese
- 1 (8-ounce) container cream cheese with garlic and herbs
- 1 teaspoon dried thyme leaves
- ½ cup shredded Swiss cheese
- 1 egg, beaten
- 2 tablespoons water
- 3 tablespoons grated Parmesan cheese
Let bread dough stand at room temperature, covered, until no longer cold. Meanwhile, in a medium saucepan heat olive oil over medium heat.
Add onion and asparagus; cook and stir until crisp-tender, about 5 minutes. Remove from heat and stir in chicken, mascarpone, cream cheese, thyme, and Swiss cheese.
Preheat oven to 400°F. Divide dough into 6 equal portions. On floured surface, roll each ball of dough into an 8″ circle.
Divide chicken mixture among circles, keeping one half of each round free of filling.
Mix egg and water; brush part of this mixture over edges of dough. Fold unfilled half of dough over filled half; crimp to close.
Brush calzones with remaining egg and sprinkle with Parmesan cheese.
Bake for 25 to 30 minutes until calzones are golden brown.

You can use other things in place of the frozen bread dough. Make your own pizza dough and use that or try using the refrigerated tubes of pizza dough. Handle the dough carefully and make sure it stays intact so the filling stays inside the dough!
