Pesto Meatball Alfredo

Alfredo sauce is basically a white sauce, with seasonings added. Read labels; some include cheese. The bottled sauces are very high quality and save you lots of time and effort. This can be served over hot cooked pasta, rice, or mashed potatoes.

INGREDIENTS | SERVES 6

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 (16-ounce) package frozen cooked meatballs
  • 1 cup beef broth
  • 1 (16-ounce) jar Alfredo sauce
  • 2 cups frozen green beans
  • 1 (3-ounce) jar basil pesto
  • ⅓ cup grated Romano cheese
  1. Heat olive oil over medium heat in large pan. Add garlic; cook and stir for 2 minutes.

  2. Add meatballs and broth. Bring to a simmer, cover, and simmer for 5 to 7 minutes until meatballs are thawed.

  3. Add Alfredo sauce and beans; bring to a simmer. Simmer, stirring frequently, for 6 to 8 minutes until meatballs and beans are hot.

  4. Add pesto and cheese; cook and stir for 3 minutes, then serve immediately.
