Slow-Cooked Swiss Tenderloin
Like Swiss Steak, pork can be pounded, then cooked in the slow cooker until meltingly tender. Serve this rich dish with a rice pilaf and fruit salad.
INGREDIENTS | SERVES 4 TO 6
- 2 tablespoons flour
- ½ teaspoon salt
- ⅛ teaspoon pepper
- 1 (1.7-pound) honey mustard pork fillet
- 2 tablespoons butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 potatoes, peeled and diced
- 1 (16-ounce) jar Alfredo sauce
- ¼ cup honey mustard
- ½ teaspoon dried dill weed
On plate, combine flour, salt, and pepper. Cut fillet into 1″ thick slices and coat in flour mixture.
Place on plastic wrap and cover with more plastic wrap. Pound pork until about ½″ thick.
Melt butter in skillet; brown pork on both sides, about 5 minutes total. Remove from skillet.
Add onion and garlic to pan; cook and stir 4 minutes. Place in 4-quart slow cooker with potatoes. Add Alfredo sauce, mustard, and dill; mix well.
Top with browned pork slices, layering if necessary. Cover and cook on low for 7 to 8 hours until pork and potatoes are tender.
