Grilled Pork Bruschetta
This excellent recipe can be served as an appetizer or as a side to a simple soup.
INGREDIENTS | SERVES 6
- 1 (20-ounce) package pork roast au jus
- ¼ cup olive oil, divided
- 1 onion, chopped
- 4 cloves garlic, minced
- 16 slices French bread
- 2 cups shredded Swiss cheese
Remove pork from package; shred pork and mix with enough of the jus to moisten; set aside.
In large skillet, heat 1 tablespoon olive oil over medium heat. Add onion and garlic; cook and stir until onions start to brown, about 10 minutes. Add pork and jus; simmer 5 to 6 minutes.
Meanwhile, prepare grill. Brush bread slices with remaining 3 tablespoons olive oil; grill on one side until crisp. Place bread, grilled side up, on work surface.
Divide pork mixture among bread slices; top with Swiss cheese.
Return to grill; cover and grill 2 to 3 minutes until bottom of bread is crisp and cheese melts. Serve immediately.
