Grilled Pork and Pepper Kabobs
This super simple recipe should be a summer staple in your house. Tangy lemon and sweet basil go perfectly with pork and bell peppers.
INGREDIENTS | SERVES 4
- 1 (18-ounce) marinated peppercorn pork tenderloin
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried basil leaves
- 1 red bell pepper, cut into strips
- 1 green bell pepper, cut into strips
Cut pork into 1″ cubes.
In small bowl, combine oil, lemon juice, and basil.
Thread pork cubes and bell pepper strips on 10″ metal skewers. Brush with the olive oil mixture.
Grill kabobs over medium-high coals until the pork registers 155°F, turning and brushing occasionally with olive oil mixture, about 10 to 15 minutes.
Marinated Meats
Marinated meats are already seasoned, so you don't have to add salt, pepper, herbs, or spices to the product unless you want to. The pork is very tender and cooks fairly quickly. Cook pork to 155°F, or just a slight pink color in the center of the meat.
