Peanut Butter Caramel Pie

This super-rich pie is perfect for summer entertaining, and it's so easy to prepare that you'll be able to whip it up way ahead of time.

INGREDIENTS | SERVES 8

  • ¾ cup brown sugar
  • ¾ cup corn syrup
  • 2 tablespoons light cream
  • ¾ cup peanut butter
  • 1 cup chocolate fudge ice cream topping
  • 1 (9″) chocolate crumb pie crust
  • 4 cups vanilla ice cream
  • ½ cup crushed chocolate sandwich cookies
  1. In medium microwave-safe bowl, combine brown sugar with corn syrup. Microwave on high for 2 minutes; remove and stir. Microwave on high for another minute; remove and stir in light cream and peanut butter. Set aside to let cool.

  2. Place chocolate fudge ice cream topping in pie crust. Top with ½ of the ice cream, then spoon on ¾ of the peanut butter mixture. Top with remaining ice cream and drizzle with remaining peanut butter mixture.

  3. Sprinkle top with cookie crumbs. Freeze for 4 to 6 hours until firm.

Ice Cream Desserts

Ice cream desserts should be solidly frozen before serving. This will take 4 to 6 hours in the coldest part of the freezer. To serve, let the dessert stand at room temperature for 15 to 20 minutes to soften slightly. Use a knife dipped in hot water for easy slicing.
