Fancy Ice Cream Cake
Wow — this luscious cake beats those expensive purchased ice cream cakes by a mile!
INGREDIENTS | SERVES 12
- 12 soft baked chocolate chip cookies
- ⅓ cup butter, melted
- 1 (16-ounce) jar hot fudge sauce
- 24 chocolate sandwich cookies, crushed
- 4 cups vanilla ice cream
- 3 cups dark chocolate ice cream
- 2 cups heavy whipping cream
- 5 tablespoons powdered sugar
- 2 tablespoons cocoa powder
- 1 teaspoon vanilla
Crush the chocolate chip cookies and mix with melted butter. Press into bottom of 10″ Springform pan. Drizzle with ½ of the fudge sauce.
Stir ½ the crushed sandwich cookies into vanilla ice cream and add to pan; smooth into even layer.
Sprinkle with remaining crushed sandwich cookies and top with chocolate ice cream.
Top with rest of hot fudge sauce and freeze for 3 hours.
In a medium bowl, whip cream with powdered sugar, cocoa powder, and vanilla until stiff.
Remove sides of springfoam pan to unmold cake. Frost top and sides of cake; return to freezer for another 4 hours before serving.
Make It Your Own
You could stir any type of chopped or crushed cookies into ice cream to make this cake, or think about using finely chopped candy bars. Vary the flavor of the ice cream, the cookies, and the whipped cream to make the cake your own.
