Shrimp and Artichoke Calzones

Calzones are stuffed pizzas. These can be served as an appetizer, or on the side with some hot soup.

INGREDIENTS | YIELDS 16 CALZONES; SERVES 4

  • 1 sheet frozen puff pastry
  • 1 tablespoon butter
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • ¼ pound medium raw shrimp
  • ½ cup minced canned drained artichoke hearts
  • ¼ cup sour cream
  • 1 cup shredded Havarti cheese
  1. Thaw the puff pastry at room temperature 30 minutes, still wrapped in its paper. Preheat oven to 400°F.

  2. In medium skillet, melt butter over medium heat. Add onion and garlic; cook and stir until onion starts to brown, about 10 minutes.

  3. Add shrimp; cook and stir until shrimp turn pink. Place in food processor; pulse until shrimp is finely chopped.

  4. Add artichoke hearts, sour cream, and Havarti cheese to shrimp mixture.

  5. Roll pastry into 12″ square; cut into 16 (3″) squares.

  6. Place 1 tablespoon shrimp mixture on each square; fold over to form triangles and press edges to seal. Bake 13 to 17 minutes until brown.

Artichoke Hearts

Artichoke hearts are packaged in cans and jars. They can be found plain, packed in water, or marinated in a spicy mixture. Don't confuse the two, as the marinated artichoke hearts are quite strong. You can use either variety in this easy recipe.
