Layered Tortellini Strata
A cheesy tortellini mixture is layered with an enhanced pasta sauce in this hearty casserole.
INGREDIENTS | SERVES 8
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 (26-ounce) jar pasta sauce
- 2 eggs, beaten
- ½ cup light cream
- ½ cup grated Parmesan cheese
- 1 (20-ounce) package cheese tortellini
- 1 cup shredded mozzarella cheese
- 1 cup shredded Colby cheese
Preheat oven to 350°F. Spray a 9″ × 13″ glass baking dish with nonstick cooking spray.
In large saucepan, heat olive oil over medium heat. Add onion and garlic; cook and stir for 5 minutes.
Add green bell pepper; cook and stir for 2 minutes longer. Add pasta sauce and simmer.
Bring a large pot of salted water to a boil. While it is heating, in large bowl combine eggs, cream, and Parmesan cheese.
Cook tortellini according to package directions. When done, drain and immediately add to bowl with egg mixture; stir to coat.
Place a layer of tortellini mixture in prepared dish; top with ½ of the tomato sauce. Repeat layers. Top with mozzarella and Colby cheeses.
Bake for 40 to 50 minutes until hot and bubbly.
