Layered Tortellini Strata

A cheesy tortellini mixture is layered with an enhanced pasta sauce in this hearty casserole.

INGREDIENTS | SERVES 8

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 (26-ounce) jar pasta sauce
  • 2 eggs, beaten
  • ½ cup light cream
  • ½ cup grated Parmesan cheese
  • 1 (20-ounce) package cheese tortellini
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Colby cheese
  1. Preheat oven to 350°F. Spray a 9″ × 13″ glass baking dish with nonstick cooking spray.

  2. In large saucepan, heat olive oil over medium heat. Add onion and garlic; cook and stir for 5 minutes.

  3. Add green bell pepper; cook and stir for 2 minutes longer. Add pasta sauce and simmer.

  4. Bring a large pot of salted water to a boil. While it is heating, in large bowl combine eggs, cream, and Parmesan cheese.

  5. Cook tortellini according to package directions. When done, drain and immediately add to bowl with egg mixture; stir to coat.

  6. Place a layer of tortellini mixture in prepared dish; top with ½ of the tomato sauce. Repeat layers. Top with mozzarella and Colby cheeses.

  7. Bake for 40 to 50 minutes until hot and bubbly.
