Pesto Beef Sandwiches

Pesto is made from basil, Parmesan cheese, garlic, olive oil, and pine nuts, all ground into a paste. It can be found in the dairy aisle of your supermarket or in jars in the condiment aisle. This versatile condiment makes a delicious sandwich filling with tender roast beef.

INGREDIENTS | SERVES 4

  • ¼ cup mayonnaise
  • ⅓ cup basil pesto
  • ½ cup shredded Havarti cheese
  • 2 cups thinly sliced deli roast beef, chopped
  • 2 tablespoons butter
  • 1 cup roasted red bell pepper strips, drained
  • 4 onion buns, split
  1. In small bowl, combine mayonnaise, pesto, and cheese; mix well. Stir in roast beef.

  2. Spread cut sides of buns with butter and toast in oven or toaster oven until golden.

  3. Spread beef mixture on bun bottoms and arrange red bell pepper strips over the beef mixture. Top with bun tops and serve.
