Slow-Cooked Minestrone

Minestrone is delicious cooked with cabbage, squash, and pasta.

INGREDIENTS | SERVES 8

  • 1 pound sweet Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 3 (14-ounce) cans reduced sodium beef broth
  • 1 (16-ounce) package baby carrots
  • 2 (4-ounce) jars sliced mushrooms, undrained
  • 1 teaspoon dried basil leaves
  • 1 yellow summer squash, sliced
  • 2 cups shredded red cabbage
  • ½ cup orzo pasta
  • ⅓ cup grated Romano cheese
  1. In large saucepan, brown sausage until done; remove, drain, and slice.

  2. Add onions and garlic; cook and stir until tender.

  3. Combine onions, garlic, tomatoes, broth, carrots, mushrooms, and basil in 4-quart slow cooker. Add sausage. Cover and cook on low for 7 to 8 hours.

  4. Add squash and cabbage; cover and cook for 1 hour.

  5. Stir in pasta; cover and cook for 15 to 20 minutes. Sprinkle with cheese and serve.

Canned Broth

Canned broths come in regular and low-salt varieties. For better control over your recipe, choose the low-salt types and add salt to taste. Boxed broths are now also available. Packaged in aseptic packaging, this shelf-stable product can be of very high quality.
