Slow-Cooked Meatball Casserole
Let this delicious and comforting casserole simmer away in your slow cooker for hours while you work or play.
INGREDIENTS | SERVES 6
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 1 (10.75-ounce) can cream of potato soup
- 1 (14-ounce) can beef broth
- 1 teaspoon dried marjoram leaves
- ⅛ teaspoon pepper
- 3 cups frozen hash brown potatoes, thawed
- 1 (16-ounce) package frozen cooked meatballs
In large saucepan, heat olive oil over medium heat. Add onion, garlic, and carrots; cook and stir for 5 minutes.
Place in 4-quart slow cooker. Add soup, broth, marjoram, and pepper; mix well. Add potatoes and meatballs; mix gently.
Cover and cook on low for 8 to 9 hours or until potatoes are tender and meatballs are hot.
Frozen Meat in the Slow Cooker
Opinions differ on the safety of cooking frozen meat in the slow cooker. If the meat is fully cooked, like precooked meatballs, it is safe. Raw meat can be a bit trickier; it's safer to add that to the slow cooker thawed.
