Salmon Fruit Wraps
A few dried and a few fresh fruits make this delicious wrap easy, with a fabulous texture.
INGREDIENTS | SERVES 6
- ½ cup plain yogurt
- 1 tablespoon yellow mustard
- ¼ cup mayonnaise
- 1 (14-ounce) can salmon, drained
- 1 cup red grapes, cut in half
- ½ cup chopped celery
- ½ cup chopped dried apricots
- 6 (10″) flour tortillas
- 1 cup chopped butter lettuce
In medium bowl, combine yogurt, mustard, and mayonnaise; mix well.
Add salmon, grapes, celery, and apricots; mix gently.
Make into sandwiches using the flour tortillas and lettuce. Serve immediately.
Dried Fruit
Dried fruits are considered natural foods. By weight, they are higher in calories than their fresh counterparts, because the water has been removed. But they are still good for you — fat-free, high in fiber and nutrients, and a great way to assuage a sweet tooth.
