Ham Chowder

This fabulous yet easy chowder is made with ingredients you probably already have on hand.

INGREDIENTS | SERVES 6

  • 1 tablespoon butter
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 3 carrots, sliced
  • 2 tablespoons flour
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
  • 1 teaspoon dried basil
  • 4 cups chicken broth
  • 2 cups hash brown potatoes
  • 1½ cups cubed canned ham
  • 1 cup light cream
  • 1 cup shredded Swiss cheese
  1. In large pot, melt butter over medium heat. Add onion and garlic; cook and stir 5 minutes.

  2. Add bell pepper and carrots; cook and stir 3 minutes longer.

  3. Add flour, salt, pepper, and basil; cook and stir for 3 minutes. Add broth; cook and stir until blended.

  4. Add potatoes and ham; simmer for 20 to 30 minutes until potatoes are tender.

  5. Add cream and cheese; gently heat through until steaming and creamy.
