Ham Chowder
This fabulous yet easy chowder is made with ingredients you probably already have on hand.
INGREDIENTS | SERVES 6
- 1 tablespoon butter
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 green bell pepper, chopped
- 3 carrots, sliced
- 2 tablespoons flour
- ½ teaspoon salt
- ⅛ teaspoon pepper
- 1 teaspoon dried basil
- 4 cups chicken broth
- 2 cups hash brown potatoes
- 1½ cups cubed canned ham
- 1 cup light cream
- 1 cup shredded Swiss cheese
In large pot, melt butter over medium heat. Add onion and garlic; cook and stir 5 minutes.
Add bell pepper and carrots; cook and stir 3 minutes longer.
Add flour, salt, pepper, and basil; cook and stir for 3 minutes. Add broth; cook and stir until blended.
Add potatoes and ham; simmer for 20 to 30 minutes until potatoes are tender.
Add cream and cheese; gently heat through until steaming and creamy.
