Crisp Tuna Balls with Herb Dip
This is an elegant and inexpensive appetizer with a great flavor combination.
INGREDIENTS | SERVES 8
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1 small onion, minced
- 2 tablespoons flour
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- ½ teaspoon paprika
- 1¼ cups sour cream, divided
- ¼ cup milk
- 2 tablespoons Dijon mustard
- 1 cup soft fresh bread crumbs
- 1 egg, beaten
- 1 (12-ounce) can light tuna, drained
- ½ cup dried bread crumbs
- ¼ cup grated Parmesan cheese
- ½ cup olive oil
- 1 tablespoon fresh thyme
- 2 tablespoons minced fresh basil
- 1 teaspoon dried oregano
Melt butter in medium saucepan; add garlic and onion and cook 5 minutes. Add flour, salt, pepper, and paprika; cook 3 minutes until bubbly.
Add ¼ cup sour cream, milk, and mustard; cook 3 minutes until thick.
Remove from heat and place in medium bowl. Add bread crumbs and egg and mix well, then add tuna and mix gently. Cover and chill 1 hour.
On plate, combine dried crumbs and cheese. Form tuna mixture into 2″ balls and roll in bread crumb mixture.
Heat olive oil in large saucepan; fry tuna balls until crisp.
Mix remaining 1 cup sour cream with herbs; serve tuna balls with this dip.
