Crisp Tuna Balls with Herb Dip

This is an elegant and inexpensive appetizer with a great flavor combination.

INGREDIENTS | SERVES 8

  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 small onion, minced
  • 2 tablespoons flour
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • ½ teaspoon paprika
  • 1¼ cups sour cream, divided
  • ¼ cup milk
  • 2 tablespoons Dijon mustard
  • 1 cup soft fresh bread crumbs
  • 1 egg, beaten
  • 1 (12-ounce) can light tuna, drained
  • ½ cup dried bread crumbs
  • ¼ cup grated Parmesan cheese
  • ½ cup olive oil
  • 1 tablespoon fresh thyme
  • 2 tablespoons minced fresh basil
  • 1 teaspoon dried oregano
  1. Melt butter in medium saucepan; add garlic and onion and cook 5 minutes. Add flour, salt, pepper, and paprika; cook 3 minutes until bubbly.

  2. Add ¼ cup sour cream, milk, and mustard; cook 3 minutes until thick.

  3. Remove from heat and place in medium bowl. Add bread crumbs and egg and mix well, then add tuna and mix gently. Cover and chill 1 hour.

  4. On plate, combine dried crumbs and cheese. Form tuna mixture into 2″ balls and roll in bread crumb mixture.

  5. Heat olive oil in large saucepan; fry tuna balls until crisp.

  6. Mix remaining 1 cup sour cream with herbs; serve tuna balls with this dip.
