Chicken Wild Rice Salad
Canned chicken goes gourmet in this easy salad made with wild rice and vegetables.
INGREDIENTS | SERVES 6
- 1 cup wild rice
- 2 cups chicken broth
- ½ cup plain yogurt
- ½ cup mayonnaise
- ¼ cup mustard
- ¼ cup milk
- 1 tablespoon lemon juice
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- 1 teaspoon dried thyme leaves
- 1 (12-ounce) can chicken, drained
- 2 tomatoes, chopped
- 1 (8-ounce) can mushrooms, drained
- ⅓ cup sliced green onions
- 1 avocado, peeled and chopped
In small saucepan, combine rice with chicken broth; bring to a simmer. Cover and simmer for 35 to 45 minutes until rice is tender.
Meanwhile, combine yogurt, mayonnaise, mustard, milk, lemon juice, salt, pepper, and thyme.
Add wild rice, chicken, tomatoes, mushrooms, and green onions; stir until coated. Cover and chill 3 to 4 hours.
When ready to serve, add avocado.
