Vegetarian Pita Pizza
These little pizzas are perfect for lunch with a cup of tomato soup.
INGREDIENTS | SERVES 6
- 1 tablespoon olive oil
- 1 red onion, chopped
- 3 cloves garlic, minced
- 1 (8-ounce) package sliced cremini mushrooms
- 1 (8-ounce) can tomato sauce
- 1 red bell pepper, chopped
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
- ½ teaspoon dried basil leaves
- 6 whole-wheat pita breads
- 1½ cups shredded part-skim mozzarella cheese
Preheat oven to 400°F. In medium saucepan, heat olive oil over medium heat.
Add onion, garlic, and mushrooms; cook and stir until liquid evaporates, about 10 to 12 minutes.
Add red bell pepper; cook 4 minutes. Then add tomato sauce, seasoning, salt, pepper, and basil; simmer 5 minutes.
Arrange pita breads on cookie sheet; top with vegetable mixture and sprinkle with cheese.
Bake for 12 to 15 minutes until pitas are crisp and cheese is melted and starts to brown.
Vegan Pizza
For a vegan pizza with no animal products of any kind, just substitute soy or vegan mozzarella cheese for the part-skim mozzarella cheese. Look in the dairy aisle of your local supermarket or ask about vegan cheeses. They are easy to find and taste very similar to the real thing.
