Vegetarian Pita Pizza

These little pizzas are perfect for lunch with a cup of tomato soup.

INGREDIENTS | SERVES 6

  • 1 tablespoon olive oil
  • 1 red onion, chopped
  • 3 cloves garlic, minced
  • 1 (8-ounce) package sliced cremini mushrooms
  • 1 (8-ounce) can tomato sauce
  • 1 red bell pepper, chopped
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • ½ teaspoon dried basil leaves
  • 6 whole-wheat pita breads
  • 1½ cups shredded part-skim mozzarella cheese
  1. Preheat oven to 400°F. In medium saucepan, heat olive oil over medium heat.

  2. Add onion, garlic, and mushrooms; cook and stir until liquid evaporates, about 10 to 12 minutes.

  3. Add red bell pepper; cook 4 minutes. Then add tomato sauce, seasoning, salt, pepper, and basil; simmer 5 minutes.

  4. Arrange pita breads on cookie sheet; top with vegetable mixture and sprinkle with cheese.

  5. Bake for 12 to 15 minutes until pitas are crisp and cheese is melted and starts to brown.

Vegan Pizza

For a vegan pizza with no animal products of any kind, just substitute soy or vegan mozzarella cheese for the part-skim mozzarella cheese. Look in the dairy aisle of your local supermarket or ask about vegan cheeses. They are easy to find and taste very similar to the real thing.
