Caprese Pizza
Sometimes simple is the best. This pizza has a wonderful combination of textures and flavors.
INGREDIENTS | SERVES 4 to 6
- 1 (12″) prebaked pizza crust
- 1 (7-ounce) package basil pesto
- 5 plum tomatoes, sliced
- 1 cup sliced fresh mozzarella
- ½ cup shredded part-skim mozzarella
- ½ cup sliced grape tomatoes
- ¼ cup grated Parmesan cheese
- ⅓ cup minced fresh basil leaves
Preheat oven to 400°F. Place pizza crust on cookie sheet and spread with pesto.
Top with plum tomatoes and fresh mozzarella, arranged evenly on crust. Top with part-skim mozzarella and grape tomatoes.
Top with Parmesan cheese. Bake for 15 to 20 minutes until cheese is melted and starts to brown.
Sprinkle with fresh basil and serve immediately.
Caprese
Caprese simply means “in the style of Capri.” It usually refers to a salad made of mozzarella, plum tomatoes, basil, and olive oil to resemble the Italian flag. This pizza mimics that combination, with basil pesto, two kinds of tomatoes, and three kinds of cheese.
