Bacon-Wrapped Fish on Greens
For honey mustard lovers! This elegant recipe is perfect for entertaining. Serve it with a side of wild rice.
INGREDIENTS | SERVES 6
- 4 (6-ounce) frozen mild white fish fillets
- ⅓ cup honey mustard
- 1 teaspoon mustard seeds
- 2 tablespoons lemon juice
- ½ teaspoon salt
- ⅛ teaspoon pepper
- 8 slices bacon
- 6 cups mixed salad greens
- 1 avocado, peeled and diced
- ⅓ cup honey mustard salad dressing
Defrost fish according to the package directions or place them, well wrapped, in the refrigerator overnight.
Preheat oven to 400°F. In small bowl, combine honey mustard, mustard seeds, lemon juice, salt, and pepper and mix well. Brush on both sides of each fillet.
Partially cook the bacon in a large ovenproof skillet until bacon is still pliable. Working across the fish, wrap each completely in the bacon, using 2 strips per fillet. Drain skillet.
Cook the fish on both sides in the skillet, turning once, until the bacon starts to crisp, about 6 minutes. Place in oven to cook for 10 to 12 minutes until bacon is crisp and fish is done.
Combine greens, avocado, and salad dressing; place on serving plates. Top with fish and serve immediately.
