  • 1 Granny Smith apple, peeled and shredded
  • 1 tablespoon lemon juice
  • 2 tablespoons prepared horseradish
  • 1 pound medium frozen raw shrimp, thawed
  • 4 (10″) flour tortillas
  • 1½ cups baby spinach
  1. In a small bowl, combine sour cream, ricotta, apple, lemon juice, and horseradish; mix well.

  2. Prepare shrimp according to package directions.

  3. Place tortillas on work surface; spread with sour cream mixture and top with shrimp.

  4. Add spinach and roll up; serve immediately.

Horseradish

There are several types of horseradish available on the market. Fresh horseradish is a root you grate like gingerroot. Prepared horseradish has been grated and mixed with vinegar and salt or sugar. Horseradish sauce or cream-style horseradish can have milk or other dairy products added to make it milder.
