Apple Horseradish Shrimp Wraps
Sweet and tart apple combines with spicy horseradish in these elegant sandwiches. You can serve the filling in leaves of lettuce as a salad or use whole-wheat buns in place of the tortillas.
INGREDIENTS | SERVES 4
- ½ cup sour cream
- ¼ cup ricotta cheese
- 1 Granny Smith apple, peeled and shredded
- 1 tablespoon lemon juice
- 2 tablespoons prepared horseradish
- 1 pound medium frozen raw shrimp, thawed
- 4 (10″) flour tortillas
- 1½ cups baby spinach
In a small bowl, combine sour cream, ricotta, apple, lemon juice, and horseradish; mix well.
Prepare shrimp according to package directions.
Place tortillas on work surface; spread with sour cream mixture and top with shrimp.
Add spinach and roll up; serve immediately.
Horseradish
There are several types of horseradish available on the market. Fresh horseradish is a root you grate like gingerroot. Prepared horseradish has been grated and mixed with vinegar and salt or sugar. Horseradish sauce or cream-style horseradish can have milk or other dairy products added to make it milder.
